Taco Pie
Recipe Description
Step 1
Preheat oven to 400° and grease an 8" or 9" springform pan with cooking spray. In a large skillet over medium heat, heat oil. Add onion and cook, stirring, until softened, about 7 minutes. Add garlic, chili powder, and cumin and cook, stirring, until fragrant, about 1 minute. Add ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes. Drain fat.
Step 2
Add tomatoes and tomato paste and cook over medium heat, stirring occasionally, until warmed through, about 2 minutes; season with salt and pepper.
Step 3
Place a tortilla on bottom of prepared pan. Top with a layer of beef mixture and a handful of cheddar and Monterey Jack. Repeat for 5 layers total, ending with cheese.
Step 4
Bake taco pie until cheese is melty and tortillas are warmed through, about 20 minutes. Let cool in pan 5 minutes.
Step 5
Garnish with desired toppings before slicing.

1 lb. ground beef
2 tomatoes, chopped
2 tbsp. tomato paste

Freshly ground black pepper
6 medium flour tortillas
1 c. shredded cheddar
1 c. shredded Monterey Jack
Pico de gallo, sour cream, and fresh cilantro, for serving
